With a swift motion, he brought the blade down, the sharp edge slicing through the boar’s thick neck cleanly then he removed the legs worked his way through the torso, each slice precise and clean sectioning the meat expertly

With the boar reduced to sections of meat, Lin Wei gathered the fresh pork ,cleaned it and placed it into a large bowl, setting it aside momentarily.

He mixed doubanjiang, salt, a handful of finely ground Sichuan peppercorns, sugar and a touch of rice wine in a bowl, he moved back to the cut-up meat. Lin Wei meticulously coated the pork pieces, letting the mixture seep into the fresh cuts.
